Still, my personal favorite is the less well known Bianchetta Genovese grape. With only +/- 50 hectares planted in all of Italy, most US wine lovers have never even heard of this grape. But please, take my word that Bianchetta Genovese - especially in the hands of a classic, skilled producer like Bisson - is worth your time. It’s effortlessly pleasing, thirst quenchingly refreshing, and for me, the wine I reach for first when cooking Italian Riviera classics like langostino pasta or pesto genovese.

Founded in 1978 by Pierluigi Lugano, the Bisson wine estate is a pioneering winery dedicated to reviving nearly extinct native grape varieties from the Italian Riviera. The estate is world-renowned for its innovative "Abissi" sparkling wine, which undergoes a unique maturation process in stainless steel cages submerged 60 meters deep in the Ligurian Sea. Operating from its main cellar in Sestri Levante, the winery manages steep, "heroic" coastal vineyards where cultivation must be done entirely by hand due to the rugged terrain. For me, Pierluigi’s most heroic achievement is reviving ancient, half-dead vineyards planted to today’s variety, Bianchetta Genovese. I’m so grateful that future wine lovers will have the opportunity to discover the unique texture, aroma and weightlessness that make Bianchetta such an ideal companion to northwestern Italy’s coastal cuisine.

The 2024 Bisson Bianchetta Genovese "ü Pastine" presents a brilliant, straw-yellow color with shimmering greenish reflections that suggest youthful energy and freshness. On the nose, it reveals a delicate yet complex bouquet of white wildflowers, crisp green apple, and an unmistakable saline breeze reminiscent of the Ligurian coast. The palate is bone-dry and medium-bodied, characterized by a vibrant acidity that carries flavors of Meyer lemon zest, unripe pear, and a distinct flinty minerality. Its finish is remarkably clean and persistent, leaving a refreshing trail of sea salt and a subtle, pleasant almond bitterness. Pierluigi Lugano’s technique of short cryomaceration and temperature-controlled fermentation in stainless steel preserves the grape’s fragile aromatics while heightening its razor-sharp structural precision. Serving this wine at a precise 52 degrees allows the tightly wound fruit notes to unfurl gracefully without losing the brisk, maritime snap that defines its personality. For the best experience, drink from a high-quality Bordeaux stem to concentrate the floral perfumes and direct the wine’s lively acidity to the tip of the tongue. This crystalline white acts as a lightning bolt of citrus and salt that electrifies the rich, succulent sweetness of Ligurian langostino pasta for a truly transcendent coastal pairing.
