Calabretta’s 2025 Carricante is the kind of white that makes thirst feel intellectually respectable. It is cool, mineral, and almost aggressively refreshing, yet there is enough extract and volcanic grip beneath the citrus to make every glass feel substantial. That combination is the great trick of Carricante, and few estates embody old-school Etna more convincingly than Calabretta. Massimiliano Calabretta spent decades defending the mountain’s traditional grapes and methods, long before the volcano became an international luxury address. This bottle captures the estate’s seriousness in its most immediate form: salt, stone, bright fruit, and a wonderfully bracing finish, delivered without ceremony and at a price that encourages opening a second bottle.                       

The Calabretta family has made wine on Etna for four generations, with roots reaching back to the early twentieth century. Massimiliano returned to the family property after studying viticulture and oenology in Milan, eventually taking responsibility for vineyards that stretch across the northern face of the volcano between Randazzo, Solicchiata, and Castiglione di Sicilia. He became one of the early standard-bearers for the traditional revival of Etna, farming organically and insisting that the mountain’s grapes needed patience rather than polish. The reputation was built largely on long-aged Nerello Mascalese, but the same lack of haste and cosmetic intervention shapes the whites.                                                                    

Carricante is especially revealing on Etna’s north side. The vines root through loose, stony volcanic sand at high elevation, where porous soils drain quickly and sharp day-to-night temperature changes help preserve acidity. Calabretta draws this bottling from a mix of younger and mature Carricante vines and ferments it spontaneously in stainless steel. It remains in steel rather than being broadened by oak, allowing the grape’s tensile structure and the mountain’s smoky, saline register to stay exposed. The method sounds simple, but simplicity is merciless: without ripe fruit, healthy vineyards, and careful farming, there would be nowhere for faults or dilution to hide.                                               

What results is not a miniature Chardonnay and certainly not an aromatic Mediterranean white. Carricante speaks in a more severe dialect. Its fruit leans toward lemon, quince, and firm pear; the center of gravity is acidity, mineral extract, and a faintly phenolic grip. Etna supplies the rest, including a sensation that can suggest crushed lava, sea salt, and dried mountain herbs even though the vines stand well above the coast. The 2025 has youthful velocity, but Calabretta’s handling gives it more breadth than its modest frame initially suggests. It is invigorating first, quietly complex second, and difficult to stop drinking throughout.                           

Serve the 2025 Carricante at 50–52°F in a large Burgundy stem. It flashes pale straw with a brilliant green edge, then erupts with lemon peel, green apple, white peach, fennel frond, chamomile, wet stone, and a thrilling gust of sea spray. The palate is electric and wonderfully satisfying, with citrus and orchard fruit racing across a taut line of acidity while subtle lees-derived roundness gives the center real dimension. A firm volcanic grip builds through the mouth, and the finish snaps back to lemon pith, smoke, salt, and stone with extraordinary energy. Involtini di pesce spada, the swordfish rolls associated particularly with Catania, are a fantastic partner: the fish meets the wine’s texture, capers and olives amplify its salinity, and tomato, herbs, breadcrumbs, and olive oil make the fruit feel even brighter. This is phenomenal Sicilian white, vivid enough for immediate pleasure and serious enough to reward complete attention.
