Yet today's spectacular 2016 Château Malaire "Réserve de Dashiel" somehow delivers exactly that, a fully mature, Cabernet Sauvignon-dominated Médoc with a pedigree that borders on unbelievable, for THIRTY-SIX DOLLARS. Until the 1990s, this vineyard was owned by Château Lafite Rothschild, which recognized the remarkable potential of this exceptionally high-elevation plateau in the Médoc. As if that weren't enough, the wine is crafted by Magali Guyon, whose skills are behind classic vintages of Château Lynch-Bages, and whose reputation for precision and elegance has made her one of Bordeaux's most respected winemakers. After nearly a decade of patient aging in Château Malaire's vast underground cellars, this 2016 "Réserve de Dashiel" is drinking exactly as mature Left Bank Bordeaux should: harmonious, seamless, and at the absolute peak of its first great drinking window. At this price, it feels less like a bargain than an accounting error, I’ve already purchased multiple cases for my family, and I advise everyone to stock up.

The vineyard itself occupies the highest plateau in the Médoc, where constant Atlantic breezes and deep gravelly soils create textbook conditions for Cabernet Sauvignon. The stones absorb the warmth of the afternoon sun before slowly releasing it overnight, encouraging complete ripening while preserving freshness, structure, and aromatic complexity. Conscientious farming further allows the vineyard's remarkable terroir to express itself with unusual clarity, producing fruit of exceptional concentration and torque without sacrificing the restraint that defines great Left Bank Bordeaux.

The final blend is 60% Cabernet Sauvignon and 40% Merlot, aged in French barrique before spending many additional years resting beneath the château in one of the Médoc's largest underground cellars. Rather than releasing wines according to a commercial calendar, the estate follows a refreshingly traditional philosophy: holding back its finest bottles until they are genuinely ready to drink. The result is a Bordeaux with all the complexity and polish that only extended cellar aging can provide—silky tannins, beautifully integrated oak, and the kind of effortless balance that is nearly impossible to replicate through winemaking technique alone. In blind tastings, this drinks remarkably similarly to many Left Bank Bordeaux wines wholesaling for twice the price in today's California market.

Served at approximately 62°F in a large Bordeaux stem, the wine reveals a deep garnet color with just the slightest brick-toned rim, announcing its maturity without suggesting even a hint of decline. The bouquet is wonderfully complex, layering blackcurrant, ripe damson plum, cedar chest, cigar box, graphite, baking spice, dried herbs, and a subtle cooling note of eucalyptus that lifts the entire wine. On the palate, it is luxuriously smooth and perfectly integrated, offering generous dark fruit wrapped around refined, fully resolved tannins that glide effortlessly across the tongue. The finish is long, savory, and unmistakably Médoc, echoing with cassis, fine tobacco, crushed gravel, and lingering spice. Pair it with a simply grilled ribeye, herb-crusted rack of lamb, or slow-roasted beef tenderloin, and you'll understand why Bordeaux remains the world's benchmark for Cabernet Sauvignon. Better still, despite drinking magnificently today, this 2016 has every indication that it will continue improving over the next five to seven years. At this price, it is criminal not to purchase multiple bottles one to enjoy immediately and several more to reward your patience.
