There’s a new guard in Chablis, and Domaine de l’Enclos is firmly in that conversation. These are wines that hit with clarity and intent, electric from the first pour, loaded with tension, and driven by that unmistakable mineral edge that only this place can deliver. What I love here is the balance: that flinty, slightly reductive snap up front, followed by real depth and texture underneath. It’s Chardonnay stripped down to its core, just precision. They’re working with serious sites including Montmains, yet the pricing hasn’t caught up to the quality. Montmains sits on the left bank of the Serein, one of the most respected Premier Cru slopes in Chablis, known for wines that marry power with cut, broad-shouldered compared to some, but always anchored by that driving limestone spine. If you love Chablis, this is a serious bottle, and at $62, it’s one of the best values in Chablis right now.

Where Meursault, Chassagne, and Puligny often lean into texture and richness, Chablis is about line, tension, and transparency. This is ancient seabed country, Kimmeridgian limestone packed with fossilized oyster shells, the remnants of a Jurassic ocean that still shape the wines today. Add in the cool climate, the marginal ripening conditions, and a tradition of restrained élevage, typically neutral oak or stainless, and you get what many consider the most transparent expression of Chardonnay on earth. Nothing to hide behind here, just site, soil, and season.

Domaine de l’Enclos is a relatively young estate, but it’s built on deep roots. Romain and Damien Bouchard come from one of Chablis’ most historic families, generations tied to the region’s vineyards, and launched the domaine in 2016 with a clear vision: organic farming, meticulous vineyard work, and wines that reflect the site above all else. Today, they farm across all four levels of Chablis, producing Petit Chablis, village Chablis, a strong lineup of Premier Crus, Montmains, Vau de Vey, Beauroy, Fourchaume, and Mont de Milieu, and Grand Cru holdings including Vaudésir, Les Clos, and Blanchot. They farm some excellent parcels across the appellation, with Montmains standing out as one of their most compelling sites. This Premier Cru vineyard, located on the left bank of the Serein, is defined by a mix of clay and Kimmeridgian limestone soils, giving both structure and that signature saline drive. The exposures here allow for steady ripening while preserving acidity, producing wines that combine breadth with precision. In the cellar, the approach is restrained and deliberate, native fermentations, extended lees aging to build texture, and élevage in a mix of stainless steel and older oak barrels to preserve freshness while adding dimension. Nothing is overworked. The goal is clarity, and it shows in the glass.

In the glass, this is classic Montmains with a finely tuned edge. Pale gold with green highlights, the nose opens with lemon zest, green apple, crushed oyster shell, and a subtle smoky reduction. There’s a lift of white flowers and wet stone underneath. On the palate, it’s all about tension, bright citrus, a saline core, and that chalky, almost powdery minerality that lingers. Medium-bodied but tightly wound, with just enough texture from lees aging to round the edges. Serve this around 50–55°F in Burgundy stems. A quick splash decant helps it open early. Pair it with oysters, a raw bar, grilled shrimp, or roast chicken with lemon and herbs. This is Chablis doing exactly what it’s supposed to do, pure, mineral, and completely dialed in.
