There’s a full spectrum when it comes to Napa Valley reds. On one end, you’ve got the leaner, leafier, more savory styles—wines that feel like a direct homage to the 1970s and early ’80s, where structure, restraint, and earth took center stage. On the other end, there are wines that go all-in on ripeness—blackberry compote, chocolate, mocha—sometimes pushed so far they feel like they could sit next to a glazed donut and not miss a beat. And then, right in the middle, there’s the sweet spot. That’s where the magic happens. Wines with real Napa density and fruit, but anchored by acidity, shaped by structure, and finished with restraint. That’s exactly where Hestan lives. We were offered a small parcel of their 2012 “Stephanie” direct from the cellar, and it stopped us in our tracks. At $50, it’s almost unheard of to find a Napa proprietary blend of this caliber with real age on it. It’s drinking beautifully right now, fully in stride, with another 5+ years of life ahead.
Napa Valley’s story is one of evolution. From its early agricultural roots in the 1800s to its rise on the global stage after the 1976 Judgment of Paris, it has continually redefined what American fine wine can be. But the real story lies in its subregions, its microclimates, and the people behind the wines. Hestan Vineyards is based in Yountville, right in the heart of Napa Valley, and is part of that modern Napa narrative—founded by Stanley Cheng, whose vision was to create wines that reflect both precision and place without falling into excess. Their estate vineyard sits in the southern part of Napa Valley, where the cooling influence of San Pablo Bay plays a critical role. That marine air extends the growing season, preserving acidity and allowing for slower, more even ripening. The winemaking team has always leaned toward balance—harvesting at the right moment, integrating oak rather than showcasing it, and building wines that can age but don’t demand it. The “Stephanie” blend, named after Cheng’s wife, represents the flagship expression of that philosophy—a Bordeaux-inspired blend of 75% Cabernet Sauvignon, 13% Merlot, 7% Cabernet Franc, and 5% Petit Verdot, each variety playing a precise role in building the wine’s structure, aromatics, and depth.
In the glass, the 2012 “Stephanie” is exactly what you hope aged Napa can be. The nose opens with black currant, ripe blackberry, and dark plum, layered with cedar, tobacco leaf, and a touch of baking spice. There’s a softness to the aromatics—nothing overblown, everything in harmony. On the palate, it’s plush and rich, but structured, with rounded tannins and a core of dark fruit that’s fully developed but still fresh. Secondary notes of leather, dried herbs, and a hint of graphite start to emerge, giving it that complexity you only get with time in bottle. The finish is long, balanced, and clean. Decant for about 30 minutes to let it open up, and serve at 55–60°F in Bordeaux stems. Pair it with grilled ribeye, braised short ribs, lamb with rosemary, or even a simple roast chicken with mushrooms. It’s Napa in its most complete form—power, polish, and restraint all working together.
