There are very few figures in modern Greek wine with the stature of George Skouras. He is an icon, both within Greece and among the sommeliers and importers who helped build the international audience for the country’s wines, and his estate remains one of the great reference points of the Peloponnese. That makes today’s 2025 Wild Ferment something of a gift: an opportunity to explore Assyrtiko, unquestionably one of the world’s great white grape varieties, through the hands of one of Greece’s most beloved and accomplished winegrowers, at a price that seems almost shockingly fair. For all the intellectual interest here, this is ultimately just an absurd amount of serious white wine for the money.
George Skouras founded his domaine in 1986 after studying oenology in Dijon, returning home as part of a generation that would fundamentally reshape modern Greek wine. His importance has never rested simply on modernizing cellar technique. More consequentially, he helped demonstrate that Greece’s indigenous varieties deserved to be treated with the same precision and seriousness afforded to the great grapes of France and Italy. Nearly forty years later, Skouras remains an unusually important bridge between generations: technically rigorous and internationally minded, but deeply committed to the grapes, landscapes and culinary traditions of Greece.
Assyrtiko is a perfect grape through which to understand that philosophy. Few white varieties combine acidity, extract and mineral intensity with quite the same authority. Even in warm conditions it can retain extraordinary freshness, and its naturally firm architecture allows it to produce wines that feel substantial without depending upon residual sugar, excessive alcohol or conspicuous oak. Here, Skouras allows those qualities to remain front and center. The wine is 100% Assyrtiko, whole-cluster pressed and fermented with indigenous yeasts in stainless steel, followed by approximately four months of aging on the lees.
That relatively simple élevage is exactly what makes the wine so compelling. The spontaneous fermentation and lees contact give the Assyrtiko texture and dimension, while stainless steel preserves its citrus, mineral character and wonderfully forceful acidity. There is generosity here, but no heaviness; texture, but no cosmetic richness. It is a wine built around the inherent structure of the grape itself. At this price, that combination is increasingly difficult to find anywhere: a serious indigenous variety, grown and vinified by one of its country’s benchmark estates, presented without unnecessary embellishment.
Serve the 2025 Wild Ferment at 52°F in a medium-sized white wine glass, giving it enough room and temperature to reveal its texture rather than emphasizing acidity alone. Pale straw in the glass, it opens with lemon peel, grapefruit, crisp pear and green apple, followed by chamomile, wet stone and a subtle saline edge. The palate is dry, concentrated and beautifully energetic, with Assyrtiko’s formidable acidity running through a surprisingly substantial, lees-rounded mid-palate. Citrus and orchard fruit gradually give way to crushed stone, herbs and salt, finishing long, clean and mouthwatering. Bakaliaros with skordalia is a wonderful partner: the wine’s acidity cuts through the fried cod and olive oil, while its citrus, mineral and saline character has enough intensity to meet the garlic head-on.
